Breakfast: Melted Cheese Muffin 5PTS

2 oz low-fat cheddar or colby cheese shredded 2ptd

1 average whole-wheat english muffin 2pts

1 item orange 1pt

Top open-faced English muffin with cheese. Broil until bubbly and enjoy with orange.

Lunch: Garden Vegetable Burger 5PTS

1/4 cup cooked brown rice 1pt

1/4 cup mushrooms diced 0pts

1/4 cup shredded carrots 0pts

1 oz low-fat shredded cheddar or colby cheese 1pt

1/2 large egg yolk or 1 small egg, beaten 1pt

1/2 average whole-wheat english muffin 1pt

1 cup spinach leaves 0pts

1/2 small tomato sliced 0pts

2 Tbsp fat-free Italian salad dressing 0pts

1 orange 1pt

Preheat grill. Mix rice and mushrooms (or onions, if desired) in a food processor. Combine with carrots, cheese and egg yolk and mix to combine. Form into a burger and grill. Serve on muffin with ketchup is desired. Complement with spinach leaves tossed with sliced tomato and dressing. Save orange for dessert.

Evening: Honey-Soy Chicken with Mango Salsa 7PTS

1 Tbsp honey 1pt

1 Tbsp low-sodium soy sauce 0pts

1/4 cup onion, finely chopped 0pts

2 Tbsp cucumber chopped 0pts

2 Tbsp ground coriander leaves 0pts

1 Tbsp unsweetened lime juice 0pts

1/4 medium mango (canned or fresh) chopped 0pts

1 cup cooked couscous 3pts

1 cup spinach 0pts

1/4 small tomato, sliced 0pts

1 tsp olive oil 1pts

1 Tbsp balsamic vinegar 0pts

3 oz uncooked chicken breast, boneless and skinless 2pts

Marinate chicken in honey and soy sauce for 30 minutes. Combine onion, cucumber, coriander, lime juice and mango and set aside. Cook chicken breast in nonstick pan with oil until tender and browned. Serve chicken topped with mango salsa on a bed of couscous. Complement with salad tossed with oil and vinegar.
